After a good wet winter and a generous recovery of the soil and underground water reserves, the spring was mild without frost or a severe storm.
These climatic conditions ensured good flowering and good fruiting.
The summer was particularly dry and hot. On July 27 a large shower of rain gave our vineyard abundant water, which, thanks to this water, was able to function normally to complete the ripening cycle.
The harvest was beautiful.
A complex soil with clay and sandstone that is dark red colored by the iron oxide, refreshed by the salty air of the Mediterranean Sea. The soil is very permeable, which improves the grape quality.
With 60% Syrah, 20% Grenache, 20% , 10% Cabernet Sauvignon and 10% Carignan.
Harvest:We wait that the grapes reach their maturity, and then we make the harvest by hand and machine. We harvest those red grapes at first to preserve all the freshness of the fruits. While in the cellar, we use a cooling machine to refresh the grapes arriving in the cellar when the outside temperature is too hot to keep the flavour inside the fruits.
Vinification :The grapes are in concrete tanks in order to macerate during few days (8 to 12) to extract lots of its flavour but not too much tannin. Then they are pressed next clarified and fermented. The temperature is controlled at all the different stages. (around 18°C).
Tasting:Beautiful clear garnet color. Nose of black fruits, cassis, elderberry and spicy notes, liquor ice and cocoa. Beautiful mouth with ripe tannins well lining the whole palate. Long finish with notes of liquor ice and coffee. A wine to enjoy from now and to keep 3-5 years. To drink with friends and with simple meals (grilled meat, salads...)
