Giol Cabernet Barrique is a Bordeaux selection of Cabernet Sauvignon. Malolactic fermentation takes place in small barrels, where the wine is then aged for 8-10 months. This gives it unmistakable oak tones, which emphasize the characteristics of the wine instead of covering them. A deep ruby red wine that tends to be purplish. In the nose cassis aromas with hints of forest fruits and cherries. The wine softens with age and acquires aromas of lavender, bay leaf, black pepper and chocolate. It is an excellent partner for haute cuisine meat dishes, charcoal grilled meats, red and white roasts, luxury poultry and game, matured cheeses such as medium-mature and mature Piave, and semi-fat semi-hard cheeses. Serve at about 20 ° C to enhance the aromas and flavors.
Harvesting is done manually when the grapes are fully ripe. The maceration lasts 6-7 days, followed by the removal of the lees. After the first fermentation, the wine is aged and transferred to French oak barrels of 210 liters and 500 liters for maturation for 8-10 months, depending on the vintage year. The different grapes are mixed immediately before bottling, carefully assessing the characteristics of the available barrels.
