The grapes are largely harvested manually, after which they go on the sorting table of the last generation, for the removal of all stalks and leaf residues. This is followed by a fermentation between 10 and 15 days at a temperature of 28 to 32 degrees. The wine ages 12 to 15 months in concrete cuves.
