The Domaine Sylvian Lochet is a small domain of 8 hectares that stands on one of the most beautiful appellations in Burgundy and in particular its vineyards of Saint-Aubin. This Saint-Aubin 1er Cru 'En Remilly' has a nice tension in the mouth, the floral and mineral aromas pull the wine in length. A very successful wine that reflects the progress of the domain in recent years. The fragrance is deep, fine and complex at the same time. The notes of yellow fruit blend with the slightly honeyed notes, a hint of honeysuckle (flowers) and notes of dried straw complete this beautiful wine. On the palate the wine is rich, we feel a great job from the winemaker to bring both gluttony and finesse in the mouth. It has a good firm structure with a flint minerality, which gives this great wine from the Côte de Beaune its freshness.
The Saint-Aubin 1er Cru 'En Remilly' of the Domaine Sylvain Loichet, planted on an ideal south-facing plot, is not far from the prestigious Chevalier-Montachet estate. The vines are more than 40 years old and are located on a very stony soil that mainly consists of limestone. The grapes are harvested manually when they are fully ripe. They are carefully pressed in a pneumatic press. The must is poured overnight in oak barrels of which 50% are new barrels. Fermentation starts naturally with native yeast and bacteria. After maturing for 9 months, the wines undergo fine filtration and are bottled by gravity.
