The Primitivo grape is an ancient grape variety that was introduced all around the Mediterranean by the Phoenicians and Greeks. The color of the wine is deep ruby red, tending to purple. It has aromas of red fruit in jam, morello cherries, cocoa and the shell of walnuts. On the palate it is full, velvety and harmonious in taste.
The grapes are grown exclusively in the province of Taranto and parts of the province of Brindish. The terroir consists of calcareous clay. The winters here are moderate and the springs and summers very dry. The grapes are harvested strictly by hand when ripe, the bunches are carefully selected and subjected to a traditional maceration of 10-12 days on the skins, during which the must is fermented at a controlled temperature. Alcoholic fermentation is followed by malolactic fermentation. The wine is aged in French oak barriques for about 6 to 8 months. After that, the wine ages for another 2 to 3 months in the bottle.
