Well of Wine Viognier has a light yellow color with green shimmers. The wine is pure, fresh and has an aromatic scent of exotic fruit such as lychee and apricots. In the mouth it is rich in fruit, mouth-filling but civilized, dry and fresh. The finish is slightly spicy with a hint of honey. The round mouthfeel confirms once again that it is a well-balanced Viognier.
This viognier comes from different vineyards within the Languedoc and Roussillon. As a result, the specific properties of these vineyards are reflected in the wine. The upper valley of the Aude has similarities with the northern Rhône valley, where the Viognier grape makes for great wines. The climate is sunny, coolness and rain are present due to the proximity of the Cevennes and the Pyrenees. The grapes grow partly on calcareous soil and partly on clay and siliceous soil at an altitude of 150 to 200m, which ensures coolness during the nights, and thus freshness in the wine.
Before the day, the viognier grapes are harvested to preserve the freshness of the wine. Upon arrival in the cellars, after pneumatic pressing, fermentation takes place in stainless steel tanks. Contact with oxygen is avoided to guarantee freshness and purity.
