After a good wet winter and a generous recovery of the soil and underground water reserves, the spring was mild without frost or a severe storm.
These climatic conditions ensured good flowering and good fruiting.
The summer was particularly dry and hot. On July 27 a large shower of rain gave our vineyard abundant water, which, thanks to this water, was able to function normally to complete the ripening cycle.
The harvest was beautiful.
A complex soil with clay and sandstone that is dark red colored by the iron oxide, refreshed by the salty air of the Mediterranean Sea. The soil is very permeable, which improves the grape quality.
Rolle 50%, Ugni Blanc 25% and Clairette 25%.
The grape harvest for the Rolle started on 8 September. These were picked very early in the morning, which facilitates the smooth functioning of the fermentations. Jas d'Esclans has a tubular exchanger for cooling the harvest to preserve the aromas during the pressing phase.
The juice was reduced in the new Inertis press, separated from the air. Juices are then kept cold for a few days to clear up. Fermentation then begins and lasts more than 15 days at low temperatures.
Light yellow to a beautiful shine. Complex nose combines fruity notes of peach, citrus, lime and floral notes of honeysuckle. The taste is fresh, light and a nice finesse. Drink with shellfish, seafood, grilled fish or as an aperitif.
